I know we just entered spring, but it definitely smells like autumn in my kitchen!
At least, that’s what my husband says. You and I both know I can’t smell it! And, if you’re on this page, chances are you or someone you know can’t smell either!
That’s why I create recipes with an emphasis on texture, and these gluten-free pumpkin maple muffins won’t disappoint in that category!

Ingredients:
-2 cups/170 grams gluten-free oat flour
-1 scoop/30 grams Vegan French Toast Protein Powder
1/4 cup brown sugar or Swerve Brown
-1 tsp baking powder
-1 tsp baking soda
-1/2 tsp cinnamon
-1/4 tsp salt
-1/2 cup/120 grams canned pumpkin
-1/4 cup/110 grams melted butter flavored coconut oil (original coconut oil works just fine here too!)
-1/2 cup almond milk
-1 large egg
-1 tsp maple extract
-1/4 cup/28 grams chopped pecans (can also use walnuts, chocolate chips, or whatever mix-ins you want!)

Steps:
1. Preheat the oven to 350F and line a muffin tin with 12 paper liners (or just grease it really well).
2. Combine the oat flour, Vegan French Toast Protein Powder, brown sugar, baking powder, baking soda, cinnamon, and salt in a small bowl. Set aside.
3. In a separate bowl, add the canned pumpkin, melted coconut oil, almond milk, egg, and maple extract.
4. Add the flour bowl to the bowl containing your wet ingredients. Stir until just combined and fold in chopped pecans or other optional add-ins if using. The batter should be relatively thick. If it seems too dry, add a tablespoon of almond milk.
5. Scoop the batter into your muffin tray. This should make 12 standard-sized muffins. Bake for 20 minutes at 350F. Your muffins may need more or less time, depending on your oven.
6. Remove from oven and let cool for ten minutes before digging in. Can be enjoyed with a drizzle of maple syrup or a slice of warm butter!

Storage:
Keep in an airtight container in the fridge for up to one week. These can also be frozen in an airtight container or plastic bag for up to three months. Just make sure that it is thawed thoroughly before reheating.
